Are there any sample or free templates available that I can use? Looking at these big yellow empty boxes in the admin is driving me nuts. The script should at least come with one already setup so we can use it or learn from it.

Yes, there are templates available. In the "Premade Templates" section you have about 5 starter as simple as possible css templates, that you can directly apply to your blogs. The source is pretty clean so you can easily understand how templates are made for BO.
So just go and use some of those templates for the start blogs you will make and learn from them.
In case you want high quality templates designed for you, a friend recently started a service at http://www.blogsorganizertemplates.com/cws/
